Yaki onigiri with lotus root

This year we would like to connect to the Re-generation theme with a Japanese staple food. We will make grilled rice balls (Yaki onigiri) with lotus root slice on top, which is the symbol of purity and enlightenment in the buddhist culture. The onigiri will be served with a side dish made in a Japanese mortar (grinding bowl) called suribachi. We will use seasonal greens and prepare a sesame seed based dressing for it. All the dishes will be vegetarian so it would fit everyone's diet.
